Roast records 007 - AA Lyego by Round hill roastery
Here we are again, another roast record on Round Hill Roastery, but this time it's their AA Lyego coffee. A beautiful bright cup and excellent filter.
Let's not waste anytime and jump straight in.

Un Caffè
This coffee is brilliant; it brings high acidity paired with a clean finish. After going through my usual process to determine what the coffee is best in, I came to the conclusion that the rich cordial taste is best as an espresso. I believe this is down to the high-pressure brew and syrupy texture.
AA Lyego is also very good as a basic filter coffee or Aeropress. Surprisingly, these methods enhance the cherry flavour and display an almost dip-dab (lollipop dipped in sherbet) aroma.
This coffee is also good in a milk-based drink and displays a cherry-aid taste, which surprised me, as most coffees that are great in a filter are not so good in a milk-based drink.
Round Hills History
Round Hill was founded in 2012 in Somerset by a small time and seems to operate still with a small team today. Their purpose is to deliver clarity and consistency from farm to cup.
Their coffee menu is seasonal as they follow global harvest cycles; this is amazing to see. They are big on supporting small farms.
A little bit from their website: Our sourcing is built around key relationship coffees – farms and producers who we have bought from for the best part of a decade and plan to continue supporting well into the future.

Conclusion
In conclusion, this coffee is a fun bag to use in various brew methods. It falls into the all-rounder category, but unlike most, it is not boring.
Priced at £52 a kg, which is good for this quality. Although I think Round Hill Roastery has better coffees on offer, I can't really complain about this one.
